I started securing my site by removing the default admin in the back end and the database. When it came to changing the jos prefix I used a "MySQL Table Prefix Changer Tool" that I came across. It changed the prefix in all the tables in my database as advertised with no problems and my sites run fine. It seemed a little too easy. I exported the database to a sql file, opened it in a text editor (Notepad++), made a "search and replace" for jos_ to somethingelse_. Saved and then imported the database in phpMyAdmin again.
